Pumpkin soup

My favorite autumn vegetable, the pumkin, as soon as I find it in the stores or markets I start cooking it in varios ways. Pumpkin addict!!!


For my first receipe I naturally use pumpkin!!! This is a very easy soup that enhance the natural swetness of the pumpkin.
1 little hokkaido pumpkin
1 little onion
extra virgin olive oil
salt
Clean, peal and cut in little pieces the pumpkin, slice the onion and put everything in a pot with a few spoons of oil and a pinch of salt and cover with water.
Put the pot on fire, cover with a lid and let cook for about 25 minutes, the pumkin has to be soft.
Using a blender make a soft creme, add, if needed, oil and salt, mix well and serve warm.
